From the very first meal, the people we served told us something important: "Tsy misy vary, tsy misy sakafo." Without rice, there is no meal. In Madagascar, rice isn't a side dish. It's the center of every meal and the heart of daily life. So that's exactly what we made: steamed white rice with laoka, the rich, savory stews that bring nourishment and comfort to every Malagasy table. Our kitchens prepared these traditional dishes for 12,000 people a day, for an entire month. Flavors the community has always known, served with the dignity they deserve.
